Preparing the Potatoes

Wash and Slice

Wash the Russet potatoes thoroughly under cold water to remove any dirt. Using a mandoline or a sharp knife, slice the potatoes thinly (about 1/8 inch thick).

Soak the Slices

Place the potato slices in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the chips crispier.

Heat the Oil

In a large, deep pot or a deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a kitchen thermometer to check the temperature.

Dry the Slices

After soaking, drain the potato slices and pat them dry with paper towels to remove excess moisture.

Fry the Chips

Carefully add a handful of potato slices to the hot oil. Fry in batches to avoid overcrowding. Cook for about 3-4 minutes or until the chips are golden brown and crispy.

Drain and Season

Using a slotted spoon, remove the chips from the oil and place them on a plate lined with paper towels to drain excess oil. Immediately sprinkle with salt, paprika, and garlic powder. Adjust seasoning to taste.
