English Muffin

Method

Poaching the Eggs

  1. 1

    Prepare the Water

Fill a large saucepan with water and add the white vinegar. Bring it to a gentle simmer over medium heat.

  2. 2

    Crack the Eggs

Crack each egg into a small bowl, taking care not to break the yolk.

  3. 3

    Poach the Eggs

Gently slide the eggs into the simmering water one at a time. Cook for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon and set aside on a paper towel.

Cooking the Canadian Bacon

  1. 4

    Heat the Bacon

In a skillet over medium heat, cook the Canadian bacon slices for about 2-3 minutes on each side, or until they are heated through and slightly crispy.

Making the Hollandaise Sauce

  1. 5

    Melt the Butter

In a small saucepan, melt the unsalted butter over low heat. Remove from heat once melted.

  2. 6

    Whisk the Egg Yolks

In a bowl, whisk the egg yolks with lemon juice and salt until the mixture is pale and slightly thickened.

  3. 7

    Combine and Emulsify

Slowly drizzle the melted butter into the egg yolk mixture while whisking continuously until the sauce thickens. Add cayenne pepper for extra flavor.

Assembling the Eggs Benedict

  1. 8

    Toast the Muffins

Split the English muffins in half and toast them until golden brown.

  2. 9

    Layer the Ingredients

On each toasted muffin half, place a slice of Canadian bacon followed by a poached egg.

  3. 10

    Pour the Hollandaise Sauce

Generously drizzle the prepared hollandaise sauce over the poached eggs.
