Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). This ensures the cakes will bake properly.

  2. 2

    Prepare Ramekins

Grease four ramekins with butter and dust with cocoa powder to prevent sticking.

  3. 3

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the unsalted butter and semi-sweet chocolate. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.

  4. 4

    Mix Sugar and Eggs

In a large mixing bowl, whisk together the granulated sugar, eggs, and egg yolks until well combined and slightly thickened.

  5. 5

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously to combine.

  6. 6

    Add Vanilla and Dry Ingredients

Stir in the vanilla extract, flour, and a pinch of salt until just combined. Do not overmix.

  7. 7

    Fill Ramekins

Evenly distribute the batter among the prepared ramekins, filling them about 3/4 full.

  8. 8

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes until the edges are firm but the center is soft.

  9. 9

    Cool Slightly

Remove from the oven and let the cakes cool for 1-2 minutes.

Serving

  1. 10

    Invert Cakes

Carefully run a knife around the edges of the cakes and invert them onto individual plates.

  2. 11

    Add Ice Cream

Top each lava cake with a scoop of vanilla ice cream.

  3. 12

    Dust with Powdered Sugar

Dust with powdered sugar if desired, and serve immediately while the center is still molten.
