Prepare the Base

    Cook the Quinoa

    Rinse 1 cup of wild Korean quinoa under cold water. In a saucepan, add the rinsed quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for approximately 15-20 minutes or until the quinoa is cooked and water is absorbed. Fluff with a fork and set aside.

    Cook the Protein

    If using a black bean patty, heat in a skillet over medium heat for about 5 minutes on each side until heated through. If using grilled chicken breast, season with salt and pepper and grill for about 6-7 minutes on each side, or until fully cooked and juices run clear. Slice the chicken breast if using.

Prepare the Toppings

    Chop the Vegetables

    Dice the medium tomato and slice the green onions thinly. Cut the avocado in half, remove the pit, and slice it into thin wedges.

    Prepare the Corn Salsa

    If you are using store-bought corn salsa, simply measure out 1 cup. If making from scratch, mix together cooked corn, diced red onion, chopped cilantro, lime juice, and salt to taste.

    Build Your Bowl

    In a large bowl, start with a base of quinoa, add the cooked black bean patty or grilled chicken breast on top, then layer with diced tomato, corn salsa, sliced green onions, and avocado. Drizzle with chipotle mayo and serve with a lime wedge on the side.
