    Prepare the Ingredients

    Gather all your ingredients: eggs, cheese, tortillas, and your chosen protein. If using bacon, sausage, or ham, make sure they are pre-cooked and chopped into bite-sized pieces. For tofu, cube it into small pieces.

Cooking the Eggs

    Scramble the Eggs

    In a bowl, crack the 4 large eggs and add 1 tsp of salt and 1 tsp of black pepper. Whisk until well combined. Heat 2 tbs of olive oil or butter in a non-stick skillet over medium heat. Pour in the egg mixture and cook, stirring gently, until the eggs are soft and just set. Remove from heat.

Assembling the Burrito

    Combine and Wrap

    In the same skillet, add your choice of protein (bacon, sausage, ham, or tofu) to the scrambled eggs and mix well. Take a tortilla and place a portion of the egg and protein mixture in the center. Sprinkle with 1/4 cup of shredded cheese. Fold in the sides of the tortilla and then roll it up from the bottom to the top to enclose the filling.

Cooking the Burrito

    Heat the Burrito

    Wipe the skillet clean and return it to the heat. Place the wrapped burrito seam-side down in the skillet and cook for about 2-3 minutes on each side until the tortilla is golden brown and crisp. Remove from heat.

Serving

    Serve Hot

    Slice the burrito in half and serve warm. Optional: serve with salsa, sour cream, or avocado on the side.
