Cut the boneless chicken breast into bite-sized pieces, approximately 1 inch in size.

In a bowl, combine all-purpose flour, cornstarch, salt, and black pepper. In another bowl, beat the eggs.
Cooking

Bread the Chicken
Dip each piece of chicken first into the egg mixture, then into the flour mixture, ensuring they are well-coated.

Heat Oil
In a large frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken
Carefully add the breaded chicken pieces to the hot oil in batches. Fry for about 5-7 minutes or until golden brown and cooked through. Remove and drain on paper towels.
Coating and Serving

Toss Chicken in Sauce
In a large bowl, pour the buffalo sauce over the fried chicken and toss until evenly coated.

Serve the boneless wings with a side of bleu cheese dressing for dipping.
