Dough Preparation

Activate Yeast
In a small bowl, mix warm water (1.5 cups) with sugar (1 tsp). Sprinkle active dry yeast (2 tsp) on top and let it sit for about 5-10 minutes until foamy.

Mix Ingredients
In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tsp). Create a well in the center, add the activated yeast mixture and olive oil (2 tbsp).

Knead the Dough
Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours or until doubled in size.
Pizza Assembly

Preheat Oven
Preheat your brick oven to 475°F (245°C) or the highest setting available.

Shape the Dough
Once the dough has risen, punch it down and divide it into two equal portions. Roll out each portion on a floured surface to your desired thickness.

Add Sauce and Toppings
Spread tomato sauce (1 cup) evenly over the surface of each pizza base. Sprinkle shredded mozzarella cheese (2 cups) on top and add desired toppings such as pepperoni slices (1 cup), sliced bell peppers (1 cup), and red onion (0.5 cup).

Drizzle and Season
Drizzle a little olive oil (2 tbsp) over the top and season with salt and pepper (to taste).

Bake the Pizza
Transfer the pizza to the preheated oven and bake for about 10-15 minutes or until the crust is golden and the cheese is bubbly.

Garnish and Serve
Remove the pizza from the oven, garnish with fresh basil leaves (0.5 cup), slice, and serve hot.
