    Prepare the Onions

    Slice the large onion into thin rings. In a skillet, melt 2 tablespoons of butter over medium heat. Add the onions and sauté until they are golden brown and caramelized, about 10-15 minutes. Remove from heat and set aside.

    Prepare the Bread

    Take 4 slices of sourdough bread and spread a thin layer of special sauce on one side of each slice.

    Assemble the Sandwich

    On two slices of sourdough bread (sauce side up), layer 2 slices of Wisconsin Swiss cheese, half of the caramelized onions, and another 2 slices of Swiss cheese. Top with the other two slices of bread, sauce side down.

    Crust the Sandwich

    Generously coat the outer sides of the assembled sandwich with grated Parmesan cheese, pressing it onto the bread to ensure it sticks.

    Grill the Sandwich

    In the same skillet used for the onions, add a small amount of butter and heat over medium heat. Place the sandwich in the skillet and grill for about 3-4 minutes on each side or until the bread is golden brown and the cheese is melted.

    Remove the sandwich from the skillet, cut in half, and serve with extra special sauce on the side for dipping.
