Prepare the Filling
In a mixing bowl, combine Boursin cheese, cream cheese, and chopped cooked bacon. Mix well until smooth.

Stuff the Jalapeños
Carefully stuff each pickled jalapeño with the cheese mixture using a small spoon or piping bag.

Prepare the Buns
Slice the pretzel buns in half and spread jalapeño jam on the inside of each bun.

Assemble the Popper
Place the stuffed jalapeños on the bottom half of each bun and sprinkle shredded cheese on top.

Fry the Jalapeño Poppers
In a deep frying pan, heat oil over medium heat. Carefully fry the assembled jalapeño poppers until golden and crispy, about 3-4 minutes per side.

Serve
Remove from oil and place on paper towels to drain excess oil. Serve hot with the top half of the bun.
