Method

Prepare the Chili Verde

    Roasting the Chilies

    Roast the Hatch green chilies and tomatillos under the broiler until charred. Peel and chop them.

    Cooking the Verde

    In a pot, sauté the onion and garlic until translucent. Add the roasted chilies, tomatillos, vegetable broth, lime juice, salt, and cumin. Simmer for 20 minutes.

Make the Bacon-Scallion Aioli

    Mixing the Aioli

    In a bowl, combine mayonnaise, crumbled bacon, chopped scallions, minced garlic, lemon juice, and salt. Stir until well mixed.

Prepare the Pepper-Candied Bacon

    Cooking the Bacon

    Preheat the oven to 375°F (190°C). Mix brown sugar and black pepper. Coat the bacon strips with the mixture and bake until crispy, about 15-20 minutes.

Prepare the Pretzel-Cheese-Jalapeño Bun

    Assembling the Buns

    Brush pretzel buns with melted butter, sprinkle with diced jalapeños, and top with shredded cheddar cheese. Bake in the oven until cheese is melted, about 5-7 minutes.

    Combining the Ingredients

    On each pretzel bun, spread a generous amount of the roasted bacon-scallion aioli, top with pepper-candied bacon, and spoon over the hatch green chili verde. Serve immediately.
