    Prepare the Caramelized Onions

    Slice the medium onion thinly. Heat olive oil in a skillet over medium heat, add the onions, and cook slowly, stirring occasionally, for about 15 minutes until golden brown and caramelized. Season with salt and pepper to taste. Set aside.

    Cook the Bacon

    In the same skillet, cook the bacon until crispy. Remove from the skillet and drain on paper towels. Once cooled, chop the bacon into small pieces.

    Make the Rosemary Aioli

    In a small bowl, combine mayonnaise, chopped fresh rosemary, and a pinch of salt and pepper. Mix well and set aside.

    Prepare the Coffee-Encrusted Maytag Bleu Cheese

    Mix the ground coffee with a small amount of salt and pepper. Take the Maytag bleu cheese and coat the top with the coffee mixture.

    Toast the English Muffins

    Cut the Wolferman's English muffins in half and toast them until golden brown.

    Assemble the Sandwich

    Spread a layer of rosemary aioli on the toasted English muffin halves. Place the coffee-encrusted bleu cheese on one half, add a layer of caramelized onions, followed by chopped bacon and a handful of arugula. Top with the other half of the muffin.

    Serve immediately while hot and enjoy your FAST COW sandwich!
