Prepare the Fish
Cut the Alaskan wild pollock fillets into finger-sized strips.

Make the Batter
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, black pepper, and paprika. Gradually add the cold water while whisking until the batter is smooth.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fish Fings
Dip each piece of pollock into the batter, allowing any excess to drip off. Carefully place the battered fish into the hot oil and fry in batches until golden brown, about 4-5 minutes. Remove and drain on paper towels.

Serve the Alaskan wild pollock fings hot with tartar sauce on the side for dipping.
