Method
Preparing the Taco Filling

Preheat the Oven
Preheat your oven to 400°F (200°C).

Chop the Vegetables
Dice the zucchini, bell pepper, and red onion into small, even pieces.

Toss with Oil and Spices
In a large bowl, combine the chopped vegetables, corn, olive oil, cumin, paprika, salt, and black pepper. Toss until the vegetables are evenly coated.

Roast the Vegetables
Spread the vegetable mixture onto a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized.

Prepare the Avocado
In a small bowl, mash the ripe avocado until smooth.

Warm the Tortillas
In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

Fill the Tacos
Place a generous amount of the roasted vegetable filling onto each tortilla.

Top the vegetable filling with a dollop of avocado cream.

Garnish with fresh cilantro if desired and serve with lime wedges on the side.
