    Prepare the Potatoes

    Wash the russet potatoes thoroughly and peel them if desired. Cut the potatoes into thin strips, about 1/4 inch wide.

    Soak the Potatoes

    Place the cut potato strips in a large bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

Cooking

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat to about 350°F (175°C). Use a thermometer to ensure the correct temperature.

    Dry the Potatoes

    After soaking, drain the potato strips and pat them dry with paper towels to remove excess moisture.

    Fry the Potatoes

    Carefully add the dried potato strips to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 5-7 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    While the fries are still hot, sprinkle with salt to taste.

Finishing Touches

    In a large mixing bowl, toss the hot fries with the truffle oil to coat them evenly.
