Prepare the Pork
Preheat your oven to 300°F (150°C). In a small bowl, mix together the smoked paprika, cumin, garlic powder, onion powder, salt, and black pepper.

Season the Pork
Rub the spice mixture all over the pork shoulder, ensuring it is evenly coated.

Cook the Pork
Place the pork shoulder in a roasting pan and cover it tightly with aluminum foil. Roast in the preheated oven for 4-5 hours or until the meat is tender and easily pulls apart with a fork.

Prepare the Slaw
In a large bowl, combine the shredded cabbage and grated carrot.

Make the Dressing
In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

Combine and Chill
Pour the dressing over the cabbage and carrot mixture. Toss to coat and refrigerate for at least 30 minutes to allow the flavors to meld.

Warm the Tortillas
In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.
