Preparation

    Prepare the Broth

    In a saucepan, heat the vegetable broth over medium heat until it simmers. Keep it warm but not boiling while you prepare the risotto.

    Sauté the Vegetables

    In a large skillet or saucepan, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute.

    Cook the Mushrooms

    Add the wild mushrooms to the skillet and sauté until they are tender and have released their moisture, about 5-7 minutes.

Cooking the Risotto

    Add the Rice

    Stir in the Arborio rice, making sure to coat the grains with the oil and butter mixture. Cook for 1-2 minutes until the rice is lightly toasted.

    Add Broth Gradually

    Begin adding the warm vegetable broth to the rice, one ladle at a time. Stir frequently and allow the rice to absorb the broth before adding more. This process should take about 18-20 minutes.

    Check for Doneness

    Taste the risotto to check for doneness. The rice should be creamy and al dente. If needed, add more broth or water to reach the desired consistency.

Finishing Touches

    Add Cheese and Season

    Once the risotto is cooked, remove it from the heat. Stir in the remaining tablespoon of butter and the grated Parmesan cheese. Season with salt and black pepper to taste.

    Serve the risotto immediately, garnished with additional Parmesan cheese if desired.
