Prepare the Tortillas
Cut the corn tortillas into quarters to form triangle shapes.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chips
Carefully add the tortilla triangles to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Make sure not to overcrowd the skillet.

Drain and Season
Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. Immediately sprinkle with salt to taste.

Mix the Salsa
In a medium bowl, combine the diced tomatoes, red onion, jalapeño, and cilantro.

Add Lime and Salt
Pour in the lime juice and add salt. Mix everything together until well combined.

Allow the salsa to sit for at least 15 minutes to let the flavors meld.
