Crust Preparation

    Preheat the Oven

    Preheat your oven to 325°F (160°C).

    Mix Crust Ingredients

    In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

    Form the Crust

    Press the mixture into the bottom of a 9-inch springform pan evenly to form the crust.

    Bake the Crust

    Bake the crust in the preheated oven for about 10 minutes, then remove and let it cool while you prepare the filling.

Filling Preparation

    Prepare the Filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

    Add Sugar

    Gradually add the granulated sugar and continue to beat until well combined.

    Incorporate Sour Cream and Vanilla

    Add the sour cream and vanilla extract, mixing until fully incorporated.

    Add Eggs

    Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.

    Pour Filling into Crust

    Pour the cheesecake filling into the cooled graham cracker crust and smooth the top with a spatula.

    Bake the Cheesecake

    Bake in the preheated oven for 55-60 minutes or until the center is set but still slightly jiggly.

    Cool the Cheesecake

    Turn off the oven and crack the oven door open. Let the cheesecake cool in the oven for 1 hour.
