Prepare the Brisket
If not already done, smoke the brisket for about 8-10 hours until tender. Once cooked, shred the brisket into bite-sized pieces and mix with BBQ sauce.

In a saucepan over medium heat, combine Velveeta cheese, cream cheese, and milk. Stir until melted and smooth. Add diced jalapeños and chili powder, mixing well. Heat through for another 2-3 minutes.

Assemble the Nachos
On a large baking sheet, spread out tortilla chips evenly. Layer the shredded brisket over the chips, followed by the queso. Top with pico de gallo, sliced jalapeños, and dollops of sour cream.

Broil the nachos in the oven at high heat for about 3-5 minutes until the cheese is bubbly and the edges are crispy. Serve immediately.
