Preparing the Brisket

Season the Brisket
In a bowl, mix together the salt, black pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper. Rub this spice mixture all over the brisket, ensuring an even coating.

Prepare the Smoker
Preheat your smoker to 225°F (107°C). Use wood chips like hickory or oak for a traditional smoky flavor. Add water to the drip tray to maintain moisture during cooking.

Smoke the Brisket
Place the seasoned brisket in the smoker, fat side up. Smoke for about 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C) for tender results. This will take approximately 8-10 hours for a 5 lb brisket.

Combine Ingredients
In a saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix well.

Simmer the Sauce
Heat the BBQ sauce mixture over medium heat. Bring it to a simmer and reduce the heat to low. Let it simmer for about 20-25 minutes, stirring occasionally, until thickened.

Slice and Serve
Slice the brisket against the grain into thin slices. Serve with the BBQ sauce on the side, and top with pickles as desired.
