Prepare the Gai Lan
Wash the Chinese broccoli thoroughly under running water. Trim the ends of the stems and cut any larger stems in half lengthwise to ensure even cooking.

Heat the oil
In a large skillet or wok, heat the vegetable oil over medium-high heat until hot.

Cook the Gai Lan
Add the prepared Gai Lan to the skillet. Stir-fry for about 3-5 minutes, or until the leaves are wilted and the stems are tender but still crisp.

Add sauce and season
Pour the oyster sauce over the Gai Lan, and add salt and pepper to taste. Toss everything together to coat the Gai Lan evenly with the sauce.

Serve
Transfer the stir-fried Gai Lan to a serving dish and enjoy immediately.
