Marinade and Chicken

Method

Preparation

  1. 1

    Marinate the Chicken

In a large bowl, combine yogurt, minced garlic, ground cumin, ground coriander, paprika, turmeric, cinnamon, salt, black pepper, olive oil, and lemon juice. Mix well until combined. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat. If using a charcoal grill, make sure the coals are hot and covered with ash.

  3. 3

    Grill the Chicken

Remove the chicken from the marinade, allowing excess marinade to drip off. Place the chicken on the grill and cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

  4. 4

    Rest and Serve

Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Slice the chicken into strips and serve it with pita bread, fresh vegetables, and your favorite sauce.
