Oyster Mushroom Po Boy

Preparation

    Prepare the Remoulade

    In a bowl, combine the vegan mayonnaise, Dijon mustard, and hot sauce. Mix well and set aside.

    Prepare the Breading

    In a shallow dish, mix together the cornmeal, flour, garlic powder, onion powder, paprika, salt, and black pepper.

    Coat the Mushrooms

    Dip the oyster mushrooms in plant-based milk, then dredge them in the cornmeal mixture until well coated.

    Fry the Mushrooms

    Heat the oil in a deep skillet over medium heat. Once hot, fry the coated mushrooms in batches until golden brown and crispy, about 3-4 minutes per side.

    Assemble the Po Boys

    Slice the sub rolls open and spread a generous amount of the remoulade on each side. Layer in the fried mushrooms, lettuce, sliced tomato, and pickles.
