Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- 2
Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- 3
Cut in Butter
Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
- 4
Combine Wet Ingredients
In another bowl, mix together the heavy cream, vanilla extract, and beaten egg.
- 5
Combine Mixtures
Pour the wet ingredients into the dry ingredients and gently mix until just combined. If using, fold in the dried cranberries, chocolate chips, or nuts at this stage.
- 6
Shape the Dough
Turn the dough out onto a lightly floured surface. Pat it into a circle about 1 inch thick. Cut into wedges or use a biscuit cutter to cut out rounds.
- 7
Bake
Place the scones on the prepared baking sheet and brush the tops with a little extra cream. Bake for 15-20 minutes or until golden brown.
- 8
Cool and Serve
Remove from the oven and let cool for a few minutes on a wire rack before serving warm.
