    Bake the Biscuits

    Preheat your oven to 425°F (220°C). In a large bowl, combine flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Turn dough onto a floured surface and knead gently. Roll out to about 1-inch thick and cut into circles. Place on a baking sheet and bake for 12-15 minutes or until golden brown.

    Fry the Chicken

    Season the chicken breasts with salt and pepper. In a skillet over medium-high heat, add oil and fry the chicken until golden brown and cooked through, about 7-8 minutes per side. Remove from skillet and let rest.

    Cook the Bacon and Eggs

    In the same skillet, fry the bacon until crispy. Remove and set aside. Crack the eggs into the skillet and cook sunny-side up or to your desired doneness.

    Assemble the Biscuit

    Split the baked biscuits in half. Layer one half with a fried chicken breast, a slice of bacon, a fried egg, and a generous handful of sharp cheddar cheese. Top with the other half of the biscuit.

    Prepare chorizo gravy by cooking chorizo in a skillet until browned and crumbled. Add flour, whisk in milk, and cook until thickened. Serve the biscuit sandwich with a side of chorizo gravy.
