    Wash and scrub the russet potatoes thoroughly. Slice them thinly using a mandoline or a sharp knife, about 1/8 inch thick.

    Place the potato slices in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

    After soaking, drain the potato slices and pat them dry with paper towels. The drier the potatoes, the crispier the chips will be.

    Preheat your oven to 425°F (220°C).
