Soaking
Place the potato slices in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

Drying
After soaking, drain the potato slices and pat them dry with paper towels. The drier the potatoes, the crispier the chips will be.

Preheating the Oven
Preheat your oven to 425°F (220°C).

In a large bowl, toss the dried potato slices with olive oil, sea salt, paprika, garlic powder, black pepper, and fresh herbs until evenly coated.

Arrange the seasoned potato slices in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy, flipping halfway through.
