For Scrambled Eggs
In a bowl, beat the eggs with salt and pepper until fully combined. Heat butter or oil in a non-stick skillet over medium heat. Pour in the eggs and stir gently with a spatula until they form soft curds. Cook until just set and remove from heat. Serve hot, garnished with fresh herbs if desired.

For Fried Eggs
Heat butter or oil in a non-stick skillet over medium heat. Crack the eggs directly into the skillet. Cook until the whites are set and the yolks reach your desired doneness (sunny side up, over easy, etc.). Season with salt and pepper, and serve immediately.

For Poached Eggs
Bring a pot of water to a simmer and add a splash of vinegar. Crack an egg into a small bowl, then gently slide it into the simmering water. Cook for about 3-4 minutes, or until the whites are set but the yolk remains runny. Remove with a slotted spoon, season with salt and pepper, and serve immediately.
