Cook the Eggs
In a separate non-stick skillet, melt the remaining tablespoon of butter over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny side up, over easy, etc.), about 2-4 minutes.

Meanwhile, toast the slices of bread or English muffin until golden brown.

On a plate, serve the homefries alongside the eggs. Add the toasted bread on the side, and enjoy your classic egg breakfast!
