    Make the Biscuits

    Preheat the oven to 425°F (220°C). In a large bowl, mix the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Turn the dough onto a floured surface and knead gently. Roll out to 1-inch thickness and cut into rounds. Place on a baking sheet and bake for 12-15 minutes until golden brown.

    Make the Chorizo Gravy

    In a skillet over medium heat, cook the chorizo until browned. Sprinkle the flour over the chorizo and cook for 1 minute. Slowly whisk in the milk, stirring constantly until the gravy thickens. Season with black pepper and salt to taste.

    Cook the Eggs

    In a separate pan, cook the eggs to your preference (fried, scrambled, or poached).

    Serve

    Split the biscuits in half, top with chorizo gravy, and serve alongside the cooked eggs.
