Prepare the Pork Tenderloin
Preheat your oven to 400°F (200°C). Pat the pork tenderloin dry with paper towels and season it with salt and black pepper. In a large oven-safe skillet, heat the olive oil over medium-high heat.

Roast the Tenderloin
Transfer the skillet to the preheated oven and roast the pork for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C). Once done, remove it from the oven and let it rest for 5-10 minutes.

Make the Sauce
While the pork is resting, place the skillet back on the stovetop over medium heat. Add the chicken broth and whole-grain mustard, scraping up any brown bits from the bottom of the pan. Stir in the heavy cream and let it simmer for about 5 minutes until slightly thickened.

Serve
Slice the pork tenderloin and serve it drizzled with the whole-grain mustard sauce.
