    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Salmon

    Season the salmon fillets with salt and pepper. In a large skillet, heat olive oil over medium heat. Cook the salmon for about 4-5 minutes on each side, or until cooked through and flaky. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add a bit more olive oil if necessary. Add the chopped red onion and sauté until translucent. Then, add the cherry tomatoes and cook until they start to soften.

    Make the Pesto Cream Sauce

    Stir in the fresh spinach and cook until wilted. Add the pine nuts and cook for another minute. Pour in your favorite pesto sauce and a splash of cream, stirring to combine. Allow to simmer for a few minutes.

    Combine Pasta and Sauce

    Add the drained penne pasta to the skillet, tossing to coat in the pesto cream sauce. Flake the cooked salmon into large pieces and gently fold it into the pasta and sauce mixture.

    Serve

    Plate the pasta and salmon mixture, garnishing with additional pine nuts if desired. Serve warm.
