Preparation Steps

  1. 1

    Prepare the Grill

Preheat your grill to medium-high heat.

  2. 2

    Grill the Portabella Mushrooms

Brush the portabella mushroom caps with olive oil and season with salt and black pepper. Grill the mushrooms for about 5-7 minutes on each side until tender and grill marks appear. Remove from grill and let cool slightly before slicing.

  3. 3

    Prepare the Salad Base

In a large bowl, combine the fresh spinach, cherry tomatoes (halved), chopped Arkansas pecans, and crumbled goat cheese.

  4. 4

    Dress the Salad

Drizzle the remaining extra virgin olive oil and aged balsamic vinegar over the salad. Toss gently to combine all ingredients.

  5. 5

    Serve

Top the salad with the grilled and sliced portabella mushroom caps. Adjust seasoning with more salt and pepper if necessary. Serve immediately.
