    Prepare the Mousse

    Preheat the oven to 350°F (175°C). In a mixing bowl, blend the goat cheese with heavy cream until smooth. Add in the eggs, salt, and black pepper, and mix until fully incorporated.

    Bake the Mousse

    Grease ramekins with olive oil and pour the cheese mixture into them. Place the ramekins in a baking dish and add hot water to the dish until it reaches halfway up the sides of the ramekins. Bake for 25-30 minutes, or until set.

    Prepare the Chive Cream Sauce

    In a small saucepan, heat the heavy cream over medium heat. Add the chopped chives, lemon juice, salt, and black pepper. Cook for 5-7 minutes until slightly thickened. Remove from heat.

    Serve

    Once the mousse is baked, let it cool slightly. Invert the ramekins onto plates, and drizzle the chive cream sauce around the mousse. Serve warm.
