Fish and Sauce
Method
Preparation and Cooking
- 1
Broiling the Fish
Preheat the broiler in your oven. Place the fresh fish fillets on a baking sheet lined with parchment paper. Melt 2 tablespoons of butter and brush it over the fish. Season with salt and black pepper.
- 2
Broil the Fish
Broil the fish for about 6-8 minutes, or until the fish flakes easily with a fork and is cooked through. Keep an eye on it to prevent burning.
- 3
Making the Beurre Blanc Sauce
In a saucepan, melt the remaining 2 tablespoons of butter over medium heat. Add the finely chopped shallot and sauté until translucent. Pour in the white wine and lemon juice, and let it simmer until reduced by half.
- 4
Finishing the Sauce
Once reduced, lower the heat and whisk in the heavy cream. Continue to whisk until the sauce thickens slightly. Adjust seasoning with salt and pepper to taste.
- 5
Serving
Place the broiled fish fillet on a plate, drizzle with the beurre blanc sauce, and garnish with fresh herbs. Serve immediately.
