Preparation Steps
- 1
Prepare the Duck Breasts
Score the skin of the duck breasts in a crosshatch pattern without cutting into the meat. Season with salt, black pepper, cinnamon, and paprika on both sides.
- 2
Cook the Wild Rice
In a medium saucepan, combine the wild rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes or until the rice is tender. Stir in the dried cranberries and let sit covered for an additional 10 minutes.
- 3
Cook the Duck Breasts
In a large skillet, heat olive oil over medium-high heat. Place the duck breasts skin-side down and cook for about 6-8 minutes until the skin is crispy. Flip and cook for another 4-6 minutes until medium-rare. Remove from the skillet and let rest.

- 5
Make the Blood Orange Demi Glace
In the same skillet, add the chicken or duck stock and blood orange juice and zest. Bring to a boil and reduce by half until thickened. Whisk in butter for a glossy finish.
- 6
Serve
Slice the duck breasts and arrange them on a plate alongside the cranberry wild rice and smoked duck sausage. Drizzle with the blood orange demi glace before serving.
