    Prepare the Beef Tenderloin

    Preheat the grill to high heat. Rub the beef tenderloin with olive oil, salt, and black pepper. Grill for about 6-8 minutes per side for medium-rare, or until desired doneness. Remove from the grill and let it rest.

    Make the Red Wine Sauce

    In a saucepan over medium heat, combine red wine and beef broth. Bring to a boil, then reduce heat and simmer for about 10-15 minutes until reduced by half. Stir in butter until melted and smooth.

    Prepare the Stilton Tomato

    Cut the tomatoes in half and place Stilton cheese on top. Place under the broiler for 2-3 minutes or until the cheese is melted and bubbly.

    Make the Whipped Potatoes

    Peel and chop the potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot. Mash the potatoes with milk and season with salt and pepper to taste.

    Cook the Asparagus

    Steam or sauté the asparagus in a pan with a little olive oil for about 5-7 minutes until tender but still crisp.

    Slice the beef tenderloin and serve topped with red wine sauce, alongside the Stilton tomato, whipped potatoes, and asparagus.
