Prepare the Broth
In a saucepan, heat the vegetable broth over low heat until it is warm but not boiling. This will help the rice cook evenly.

Add the Carrot, Zucchini, and Bell Pepper
Stir in the diced carrot, zucchini, and bell pepper. Cook for another 5 minutes until the vegetables start to soften.

Add the Arborio Rice
Add the Arborio rice to the skillet and stir well to coat the rice with the oil and vegetables. Cook for about 2 minutes until the rice is slightly translucent.

Gradually Add Broth
Begin adding the warm vegetable broth, one ladle at a time, to the rice mixture. Stir frequently and allow the rice to absorb the broth before adding more. This process will take about 15-20 minutes.

Add Peas
When the rice is almost cooked and has a creamy consistency, stir in the peas and cook for an additional 5 minutes. The rice should be al dente.

Finish with Parmesan
Remove the skillet from heat and stir in the grated Parmesan cheese. Season with salt and black pepper to taste.

Garnish and Serve
Serve the risotto hot, garnished with chopped fresh parsley and additional Parmesan cheese if desired.
