    Prepare the Chicken

    Preheat your oven to 200°C (400°F). Rinse the whole chicken under cold water and pat dry with paper towels. Rub the chicken with olive oil, salt, black pepper, and minced garlic, making sure to cover the inside and outside.

    Season the Inside

    Stuff the cavity of the chicken with fresh thyme and any remaining garlic. This will infuse the chicken with flavor as it roasts.

    Prepare the Mushrooms and Bread

    Slice the shiitake mushrooms and tear the bread into small pieces. In a separate bowl, mix the mushrooms and bread pieces with a drizzle of olive oil, salt, and pepper. This will create a flavorful stuffing.

Cooking

    Stuff the Chicken

    Spoon the mushroom and bread mixture into the cavity of the chicken. Secure the opening with kitchen twine or toothpicks to hold the stuffing inside during roasting.

    Roasting the Chicken

    Place the stuffed chicken breast-side up on a roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 75°C (165°F). Baste the chicken with its juices halfway through cooking for extra moisture.

Making the Jus

    Prepare the Jus

    While the chicken is roasting, combine the chicken stock and red wine (if using) in a saucepan over medium heat. Bring to a simmer and reduce by half to concentrate the flavors.

    Finish the Jus

    Once the chicken is done, remove it from the oven and let it rest for 10-15 minutes. Use the drippings from the roasting pan, scraping up any browned bits, and add them to the saucepan with the stock. Stir in the butter until melted and season with salt and pepper to taste.

Serving

    Serve the Dish

    Carve the roasted chicken and serve with the mushroom and bread stuffing on the side. Drizzle the jus over the chicken for added flavor.
