Method

Custard Preparation

    Mix Cream and Milk

    In a medium saucepan, heat the heavy cream and whole milk over medium heat until hot but not boiling.

    Whisk Egg Yolks

    In a separate bowl, whisk together the egg yolks and granulated sugar until pale and slightly thickened.

    Combine Mixtures

    Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly to temper the eggs.

    Add Peanut Butter and Vanilla

    Stir in the peanut butter and vanilla extract until fully combined.

    Strain Custard

    Strain the custard through a fine mesh sieve into a bowl to remove any lumps.

    Pour into Ramekins

    Divide the custard mixture evenly among ramekins and place them in a baking dish.

    Bake in Water Bath

    Fill the baking dish with hot water halfway up the sides of the ramekins and bake at 325°F (160°C) for 30-35 minutes, or until set.

    Cool and Refrigerate

    Remove from the oven, let cool, then refrigerate for at least 4 hours or overnight.

    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Once the custard has set, spread a layer of concord grape jam evenly over the top of each custard.

Concord Grape Sorbet Preparation

    In a saucepan, combine water and granulated sugar. Heat over medium heat until the sugar is dissolved. Let cool.

    In a large bowl, mix the concord grape juice and lemon juice with the cooled simple syrup.

    Place the mixture in an ice cream maker and churn according to manufacturer's instructions until it reaches a sorbet consistency. Transfer to a container and freeze until firm.
