Prepare the Dough

Boil Water and Butter
In a medium saucepan, combine water and unsalted butter. Bring to a boil over medium heat.

Add Flour and Salt
Once the mixture is boiling, remove it from heat and add all-purpose flour and salt all at once, stirring vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

Cool the Dough
Allow the dough to cool for about 5 minutes, until it is warm but not hot to the touch.

Incorporate Eggs
Add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
Add Cheese and Seasoning

Mix in Cheese
Stir in the grated Gruyère cheese, freshly ground black pepper, and nutmeg until fully combined.
Bake the Gougères

Preheat Oven
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Pipe the Dough
Using a pastry bag fitted with a plain round tip, pipe small mounds (about the size of a golf ball) of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake
Bake in the preheated oven for 20-25 minutes, or until the gougères are puffed and golden brown.

Cool and Serve
Remove from the oven and allow to cool slightly before serving warm.
