Soup Preparation

    Sauté the Onions

    In a large pot, melt 4 tablespoons of butter and 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are deeply caramelized, about 30-40 minutes.

    Add Garlic and Deglaze

    Once the onions are caramelized, add the minced garlic and cook for another 2 minutes. Pour in 1 cup of dry white wine, scraping the bottom of the pot to deglaze and let it simmer for 5 minutes.

    Add Broth and Spices

    Stir in 6 cups of beef broth, 1 teaspoon of thyme, 1 bay leaf, 1 teaspoon of salt, and 1 teaspoon of black pepper. Bring to a boil, then reduce heat to low and let it simmer for 20 minutes.

    Finish the Soup

    Remove the bay leaf and adjust seasoning if necessary. Set aside while you prepare the croutons.

Crouton Preparation

    Prepare the Bread

    Preheat your oven to 375°F (190°C). Spread 2 tablespoons of butter on both sides of the 4 slices of bread.

    Bake the Croutons

    Place the bread slices on a baking sheet and bake in the preheated oven for about 10-12 minutes or until golden and crispy.

Assembly

    Serve the Soup

    Ladle the hot soup into bowls. Top each bowl with croutons, and sprinkle with 1 cup of shredded comté cheese.

    Garnish

    Finish by garnishing with chopped chives and serve immediately.
