Profiterole Dough

Prepare the Dough
Preheat your oven to 400°F (200°C). In a medium saucepan, combine the water and unsalted butter over medium heat. Stir until the butter is melted.

Pipe the Dough
Transfer the dough to a piping bag fitted with a large round tip. Pipe small mounds (about 1 inch in diameter) onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.

Bake
Bake in the preheated oven for 20-25 minutes, or until the profiteroles are golden brown and puffed up. Remove from the oven and allow to cool completely.
Chocolate Sauce

Heat the Cream
In a small saucepan over medium heat, heat the heavy cream until it's just about to boil.

Melt the Chocolate
Remove the saucepan from heat and add the semi-sweet chocolate chips. Stir until the chocolate is completely melted and smooth. Add the vanilla extract and mix well.
Assemble

Fill the Profiteroles
Once the profiteroles are cooled, cut a small slit in the side of each one. Using a small spoon or piping bag, fill each profiterole with a scoop of vanilla ice cream.

Serve
Drizzle warm chocolate sauce over the filled profiteroles and serve immediately.
