Crust Preparation

    Preheat the Oven

    Preheat your oven to 325°F (160°C).

    Mix Crust Ingredients

    In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are well coated and the mixture resembles wet sand.

    Form the Crust

    Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Use the bottom of a measuring cup to pack it tightly.

    Bake the Crust

    Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while you prepare the filling.

Filling Preparation

    Beat the Cream Cheese

    In a large mixing bowl, use an electric mixer to beat the softened cream cheese until smooth and creamy, about 2-3 minutes.

    Add Sugar and Sour Cream

    Gradually add in the granulated sugar and mix until combined. Then add the sour cream, vanilla extract, and lemon juice. Mix until smooth.

    Incorporate Eggs

    Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.

    Pour Filling into Crust

    Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.

    Bake the Cheesecake

    Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door, letting the cheesecake cool in the oven for 1 hour.

    Chill the Cheesecake

    Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight, before slicing and serving.
