Prepare the Calamari
Clean the calamari by removing the innards, cartilage, and skin. Rinse under cold water and cut into rings.

Make the Coating
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Dredge the calamari rings in the flour mixture, shaking off any excess flour.

Fry the Calamari
Carefully place the coated calamari in the hot oil in batches, frying for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
Spicy Aioli

Make the Aioli
In a small bowl, mix together the mayonnaise, minced garlic, lemon juice, hot sauce, and salt. Stir until well combined.

Serve the fried calamari hot with the spicy aioli on the side for dipping.
