Steak Preparation

    Season the Steak

    Sprinkle both sides of the bistro steak pieces with salt and black pepper.

    Sear the Steak

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the steaks and sear for 4-5 minutes per side for medium-rare. Adjust cooking time for your desired doneness.

    Rest the Steak

    Remove the steak from the skillet and let it rest on a plate for at least 5 minutes before serving.

Bordelaise Sauce

    Prepare the Sauce Base

    In the same skillet used for the steak, add minced shallots and sauté over medium heat until softened, about 2-3 minutes.

    Deglaze the Pan

    Pour in the red wine, scraping the bottom of the skillet to release any browned bits. Bring to a boil and let it reduce by half.

    Add Stock and Season

    Add beef stock and thyme to the pan. Let it simmer until it thickens slightly, about 5-7 minutes. Season with salt and pepper to taste.

    Finish with Butter

    Remove the sauce from heat and whisk in the butter until melted and smooth.

Chive Garnish

    Prepare Chives

    Chop fresh chives and set aside for garnishing the steak before serving.

Pomme Frites Preparation

    Cut the Potatoes

    Peel the russet potatoes and cut them into thin strips to resemble fries.

    Soak the Potatoes

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a deep pot or fryer, heat vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain and dry the potatoes thoroughly. Carefully add them to the hot oil in batches and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

    Season the Fries

    Sprinkle the fries with salt while they are still hot.
