Arepas

Method

Preparation

  1. 1

    Prepare the Arepas

In a large bowl, mix the pre-cooked cornmeal, warm water, and salt. Stir until a dough forms.

  2. 2

    Shape the Arepas

Divide the dough into equal portions (about 8) and shape each into a patty, approximately 1/2 inch thick.

  3. 3

    Cook the Arepas

Heat a non-stick skillet over medium heat, add a bit of olive oil, and cook the arepas for about 5-7 minutes on each side until they are golden brown and cooked through.

  4. 4

    Prepare the Chicken Sofrito

In a separate pan, heat the olive oil over medium heat. Add the diced onion, garlic, and bell pepper. Sauté until softened, about 5 minutes.

  5. 5

    Add Chicken and Seasoning

Add the shredded chicken and cumin to the sautéed vegetables. Stir to combine and heat through for about 3-5 minutes.

  6. 6

    Make the Guacamole

In a bowl, mash the avocado and mix in the lime juice, salt to taste, and chopped cilantro.

  7. 7

    Assemble the Arepas

Slice the cooked arepas in half and stuff them with the chicken sofrito, a dollop of guacamole, and a drizzle of crema fresca.
