Prepare the Arepas
In a large bowl, mix the pre-cooked cornmeal, warm water, and salt. Stir until a dough forms.

Shape the Arepas
Divide the dough into equal portions (about 8) and shape each into a patty, approximately 1/2 inch thick.

Cook the Arepas
Heat a non-stick skillet over medium heat, add a bit of olive oil, and cook the arepas for about 5-7 minutes on each side until they are golden brown and cooked through.

Add Chicken and Seasoning
Add the shredded chicken and cumin to the sautéed vegetables. Stir to combine and heat through for about 3-5 minutes.

Assemble the Arepas
Slice the cooked arepas in half and stuff them with the chicken sofrito, a dollop of guacamole, and a drizzle of crema fresca.
