    Bring to temperature

    Remove the 8 oz tenderloin from the refrigerator 30–45 minutes before cooking so it comes closer to room temperature. Pat dry thoroughly with paper towels.

    Season both sides of the steak generously with the kosher salt and then with the freshly ground black pepper. Press the seasonings lightly so they adhere.

    Heat a heavy skillet (cast iron preferred) over medium-high heat until smoking hot, about 3–5 minutes. Add the neutral oil and swirl to coat.

    Place the steak in the hot pan and sear undisturbed for 2–3 minutes, until a deep brown crust forms. Flip and sear the other side 2 minutes. For an 8 oz (about 1.5–2 inch thick) tenderloin aiming for medium-rare, reduce heat to medium and continue cooking 2–4 more minutes per side as needed (see internal temperature guidance below).

    In the last 1–2 minutes of cooking, add the unsalted butter, thyme sprigs, and smashed garlic clove to the pan. Tilt the pan slightly and spoon the melted butter and juices over the steak repeatedly (basting) to flavor and finish the crust.

    Remove the steak to a cutting board and tent loosely with foil. Rest for 8–10 minutes so juices redistribute. During this time the internal temperature will rise about 5°F (3°C). Target internal temperatures before resting: rare 120°F, medium-rare 125–130°F, medium 135–140°F.

Finishing & Optional Sauce

    While the steak rests, pour off any excess fat from the pan, leaving the fond (browned bits). Return the pan to medium heat.

    Add the red wine to deglaze the pan, scraping up browned bits with a wooden spoon. Let the wine reduce by half, about 1–2 minutes.

    Add the beef demi-glace or reduced beef stock and simmer 1–2 minutes until slightly thickened. Remove from heat and swirl in the cold butter pieces one at a time to emulsify and make a glossy sauce. Season to taste with a pinch of salt and pepper if needed.

    Slice the rested tenderloin against the grain into 1/2-inch thick medallions (or serve whole if preferred). Spoon the pan sauce over or alongside the steak. Garnish with chopped parsley if using.
