Discard ice water from the chilled glass just before serving.

Muddle celery
Cut the celery stalk into 1‑inch pieces. In a mixing glass or shaker, add the celery pieces and 0.5 oz of the lime juice. Gently muddle 6–8 times — press firmly enough to release juice and vegetal aromatics but avoid pulverizing into a puree. Reserve a small celery leaf for garnish.

Combine main ingredients
Add Seedlip Garden (2 oz), the remaining 0.25 oz lime juice, 0.5 oz agave syrup, and the egg white to the shaker with muddled celery. Add two grinds of fresh cracked black pepper directly into the shaker.

Dry shake
Without ice, securely dry‑shake the mixture vigorously for 20–30 seconds. This develops a rich, stable foam from the egg white.

Wet shake
Add a large handful of ice to the shaker and shake again hard for 15–20 seconds to chill and properly dilute the cocktail while maintaining the foam.

Double strain and serve
Double‑strain the cocktail (through a Hawthorne and a fine mesh) into the chilled coupe to remove celery solids and small ice shards, ensuring a silky texture.

Finish with pepper
Gently tap the shaker once to allow foam to settle slightly. Lightly dust the top of the foam with a small pinch of freshly cracked black pepper (to taste).

Garnish with the reserved celery leaf or a thin celery ribbon laid across the foam and serve immediately.
