Punch Base

Method

Punch Base

  1. 1

    Combine fruit components

In a large pitcher or punch bowl (about 2–3 quart capacity), pour 1 cup Ponchatoula strawberry purée and 2 cups chilled pomegranate juice.

  2. 2

    Add lime and sweeten

Add 1/2 cup fresh-squeezed lime juice. Stir and taste. Add 2 tablespoons simple syrup if you prefer a sweeter punch; adjust to taste. Mix until homogeneous.

  3. 3

    Chill briefly

Cover and refrigerate the punch base for at least 20–30 minutes to let flavors marry. If short on time, proceed but keep everything chilled.

Carbonation & Finish

  1. 4

    Add ice and ginger beer

Just before serving, add 4 cups of ice to the pitcher or transfer the chilled base into a larger serving bowl filled with ice. Slowly pour 3 cups chilled ginger beer into the base to preserve carbonation. Stir gently once to incorporate—do not over-stir or you will lose fizz.

  2. 5

If making individual servings, fill glasses with ice and strain or spoon punch over the ice, topping each with ginger beer to taste (about 3/4 cup per serving).

Garnish

  1. 6

    Prepare garnish

Add halved strawberries, 1/2 cup pomegranate arils, and lime wheels directly to the punch bowl or float a few pieces in each glass. Add a mint sprig to each glass for aroma if using.

  2. 7

Serve immediately while ginger beer is still fizzy. Provide a spoon for guests to scoop fruit from the bowl if served family-style.
