    Prepare glass

    Chill an old fashioned glass briefly by filling it with ice water or placing it in the freezer for a few minutes. Discard the chilling ice/water before assembling the cocktail.

    Combine ingredients

    In a mixing glass add 2 oz bourbon or rye, 0.5 oz house demerara syrup, 0.25 oz black cherry syrup or liqueur, 3 dashes Angostura bitters and 1 dash orange bitters.

    Add ice and stir

    Fill the mixing glass with large cubed ice and stir with a bar spoon for about 20–30 seconds (15–25 revolutions) until the mixture is well-chilled and slightly diluted (target ~20–25% dilution from start to finish).

    Strain

    Place a single large ice cube into the chilled old fashioned glass and strain the mixed drink over the ice using a Hawthorne or julep strainer.

    Express and garnish

    Express an orange peel: hold the peel over the glass with the outside (zest) facing down and give it a sharp fold to release oils, then rub the peel around the rim and drop it into the drink. Skewer one black cherry and place it on top of the ice as a garnish.

    Serve

    Serve immediately. Recommend providing a stirring straw or bar spoon so the guest can re-stir if desired as the large cube melts.
